I found a recipe while looking for gooey biscuits, but it didn’t really work for me, they didn’t quite seem right. So half inspired to improve and half not wanting to go to the shops, I changed it and they are actually, in our opinion anyway, better 🙂
Ingredients:
- 150g Butter
- 1/2c Brown Sugar
- 1/2c Icing Sugar
- 2 Egg Yolks
- 1/3c Cocoa
- 1t Vanilla Essence
- A bag of White Chocolate Buttons
- About 2c Flour
Method:
- Slightly melt the butter to make it easier to mix
- Mix in the sugars
- Mix in the vanilla and yolks
- Mix in sifted cocoa
- Mix in the flour until the mix is dry but still binds together
- Put it in the fridge for a bit, roughly one episode of Saffron’s favourite show 😉
- Preheat oven to 190°C and put baking paper on 2 – 3 trays
- Flour the bench and rolling pin, don’t be stingy or they will stick to the bench and cutter
- Roll out a manageable chunk of the dough to about 1cm thick
- Cut out shapes and put them on a tray. They don’t expand much so you can fit lots on a tray
- When the tray is full, put a chocolate button (or more if you like) on each
- Put in the oven for 10 minutes and then leave to cool
- Be sure to test a few while they are still warm
- Repeat steps 9 – 14 until you run out of dough
