Kendra’s Favourite: Chicken, Potato, Bacon and Cheese Sauce

Ingredients:
Potatoes:
Potato (washed and cubed – around 15mm square)
Mint
Rosemary
Water
Salt
Garlic
2T Oil

Meat:
Chicken (diced)
Bacon (cut into small strips about 3mmx20mm)
1 Onion (chopped fine)
Butter (for frying)

Sauce:
1c Cheese
2c Milk
50ml Cream
2T Flour
1 Pinch Cayenne Pepper
50g Butter

Method:

In the bottom part of a veggie steamer add some salt, mint, rosemary and water.  In the top add your potatoes.  Steam until they are cooked to your liking.

In a saucepan add all the sauce ingredients.  Stir frequently and reduce till it is at the required consistency.

Heat a little butter in a frying pan then add the onion.  Then add the chicken.  When the chicken is almost cooked add the bacon.

When the potatoes are ready, remove from the steamer and fry briefly in oil and garlic (add extra herbs and salt  if desired) to slightly crisp the outside.
